Waterford Ballykilcavan Edition 1.1 (70cl, 50%)

Waterford Ballykilcavan Edition 1.1 is the first release in this single farm origin Irish single malt from Waterford Distillery. It is bottled at cask strength, 50% ABV, in a 70cl bottle, and made entirely from barley grown by David Walsh-Kemmis at Ballykilcavan, west of the River Barrow in County Laois. The barley was harvested on 17 August 2015 and distilled in the eighth week of 2016, after an extended fermentation and an unhurried distillation. It matured for 3 years, 11 months and 18 days before bottling in June 2020.
