Waterford – Ballykilcavan Edition 1.2 (70cl, 50%)

Waterford Ballykilcavan Edition 1.2 is an Irish single malt made from barley grown on Ballykilcavan Farm and harvested on 17 August 2015. The spirit was distilled in 2016 and matured in a combination of American and European oak casks for 3 years, 11 months and 18 days. It was bottled in July 2020 at 50% ABV, without additions and unchillfiltered. This is one of 9,000 bottles, sold in a 70cl size. The nose combines red grapes, tilled earth, dried fruit, barnyard, cooking apples and the smell of a forest after rain. The palate is oily, with white pepper, apricots, spices, toffee, malt and wood shavings. The finish is dry and lasting, with spice, chocolate and malt.
