Waterford – Ballymorgan Edition 1.1 (70cl, 50%)

An Irish single malt from Waterford, made from barley grown on Ballymorgan Farm and harvested on 13 September 2015. The spirit was distilled in 2016 and matured in American and European oak casks for 3 years, 10 months and 23 days before bottling in July 2020. It is one of 9,000 bottles, filled at 50% in a 70cl size with no additions and without chill filtration. The nose is green apple, milk chocolate, pears, dried fruits and rhubarb and custard, with more custard than rhubarb. On the palate there is green apple coated in caramel, cloves, custard, liquorice and mint chocolate. The finish is a gentle, fading heat, leaving an oily spiciness and chocolate.
