Waterford Ballyroe is Edition 1.1 of the Single Farm Origin series, an Irish single malt and the first distilled from barley grown on Ballyroe Farm. It was distilled in week 12 of 2016 and bottled in February 2021, at 50% in a 70cl bottle. The outturn was 9,384 bottles.
The whisky matured in first-fill bourbon, French oak wine, virgin oak and sherry casks.
The nose recalls a summer garden in bloom, with marzipan, honey, heather, dry clay, rhubarb, fennel, orange zest, barley, sherry and rosewater. The palate has white pepper, sorbet, orange marmalade, dark chocolate and rhubarb bread. The finish is long, centred on dark chocolate and orange.
