Waterford – Biodynamic Luna 1.1 (70cl, 50%)

Biodynamic Luna 1.1 is an Irish single malt from Waterford Distillery, made with barley from three farmers and described as the first whisky distilled from biodynamically grown barley. It was distilled on 7 March 2018 and bottled on 3 September 2021 at 50% ABV. The whisky matured in first-fill American oak, French oak and ex-vin doux casks, and 21,000 bottles were filled. The nose brings plums, apricot jam, fruit salad, cold coffee, milk chocolate with almond and herbal tea. The palate is spicy from start to finish, with white pepper, clove, green pepper, jalapeno, dark chocolate and liquorice, and the finish is warm and peppery.
