Waterford Heritage Hunter 1.1 is an Irish single malt and the first bottling made from a revived barley variety, named after the plant breeder Dr Herbert Hunter. It belongs to the Arcadian series and is bottled at 50% ABV, limited to 10,000 bottles worldwide.
The whisky matured in a mix of casks: 45% first-fill American oak, 19% new American oak, 21% French oak and 15% French sweet wine (Vin Doux Naturel) casks.
The nose is dry earth, lemon, red apple skin, dried bark, rolled barley, baked salt and chalk. The palate offers orange cake, dry savoury spices, cloves, plum porridge, charcoal and citrus oils, leading to a long, dry, green finish with gentle spice.
