Waterford – Mortarstown Edition 1.1 (70cl, 50%)

This is the first bottling from Waterford made with barley from Mortarstown Farm. It was distilled in the sixth week of 2017 and bottled in March 2021 at 50% ABV, with an outturn of 5000 bottles. The whisky matured in first fill ex-bourbon casks, new American oak, ex-Sauternes casks and ex-Margaux wine casks. The nose offers dark chocolate, raisins, plums, cherries, liquorice, almond, clove, blood orange and cinnamon. On the palate are ripe banana, clove, pepper, coconut, tea, mint and liquorice. The finish is long and dry with a spicy touch.
