Waterford Organic: Gaia 1.1 is a three-year-old Irish single malt, bottled in 2020 at 50% in a 70cl bottle. It was the first whisky in Ireland to be certified organic, and it is non-chill-filtered and without added colour.
It opens the Arcadian series and is made from the 2016 barley harvests of several Irish organic farmers. It matured in first-fill American oak, virgin oak, French oak and Vin Doux Naturel casks.
The nose has cereal, honey, vanilla, orange peel and cane sugar. The palate is creamy and oily, with oak, clove and pepper, then cherry, quince and dried apricot. The finish is sweet, with pears poached in port.
