Waterford Organic Gaia 2.1 is an organic Irish single malt from Waterford Distillery, bottled at 50% ABV in a run of 30,000 bottles. It belongs to the distillery's Arcadian series.
The barley came from six organic Irish farmers and includes the Overture and Taberna varieties. Distillation took place in week 11 of 2017, and the spirit matured for 1,527 days in a mix of 39% first-fill American oak, 17% new oak, 19% French oak and 25% casks that previously held sweet wines such as port and Marsala.
The nose offers orange peel, fresh soil, bread crust and brown sugar, with milk chocolate, fruit salad, lavender and marshmallow. The palate is spicy, with white pepper, grapefruit, liquorice and cherry. The finish is long and dry.
