Waterford – Organic Gaia 2.1 (70cl, 50%)

This is an Irish single malt from Waterford Distillery, the third bottling of Gaia and part of the Arcadian Series. It is distilled from organically grown barley and bottled at 50% ABV in a 70cl bottle. The spirit was distilled in March 2017 and bottled in August 2021, in a run of 30,000 bottles. The nose offers orange zest, bread crust, brown sugar, milk chocolate, fruit salad and lavender. The palate starts spicy with white pepper, then grapefruit, liquorice, cherry, coconut powder, toast and nuts. The finish is dry, with a touch of peach.
