Waterford Organic Gaia Edition 2.1 is an Irish single malt in a 70cl bottle at 50% ABV. It is made solely from certified organic barley grown on selected Irish farms, and it follows the first organic edition from the distillery. It is non-chill-filtered and has no added colouring. The nose is fresh, with green apple, pear, wild honey and citrus, along with malted cereal, meadow flowers and gentle spice. The palate is rich and structured, with sweet malt, orchard fruit, vanilla, buttery biscuits, white pepper and toasted oak. The finish is long, with cereal, honey, soft spice and delicate herbal notes.
