Waterford – Peated: Fenniscourt 1.1 (50%)

Fenniscourt 1.1 is a peated Irish malt whiskey from Waterford distillery in the south-east of Ireland, bottled at 50%. It combines Irish barley from individual farms with Irish peat, a pairing intended to show terroir. The barley was dried over peat from Ballyteige in County Kildare, at 38ppm. Waterford is described as the first distillery to use Irish peat since the 1850s, and Mark Reynier is the person behind it. The casks involved are American oak, French oak, Sauternes, sherry and virgin oak.
