Waterford Sheestown Edition 1.1 is an Irish single malt from the Single Farm Origin series, made with barley grown at Sheestown Farm and harvested in 2016. The barley was distilled and matured separately.
After four years in first-fill bourbon barrels, new American oak, French oak and Vin Doux Naturel wine casks, it was bottled in July 2020 at 50% in a 70cl bottle, without chill filtration or added colour. About 9,000 bottles were filled.
Green apple, citrus, malt and floral notes meet vanilla on the nose. The palate is lively, with barley, pear, citrus peel, spicy oak and a little sweetness from the wine cask. The finish is dry and medium to long, with fresh acidity and lingering spice.
