Waterford Sheestown Edition 1.1 is a single farm origin Irish whiskey made from barley grown just outside the town of Kilkenny. It reflects the distillery's focus on terroir and the character of one farm's harvest. The whiskey was matured in a combination of French and American oak casks. The aroma is warm, with toasted wood and soft sweetness. The palate offers rich caramel and subtle vanilla with gentle oak, leading to a smooth, lingering finish.
