Waterford Sheestown Edition 1.1 is an Irish single malt made from barley grown on Sheestown Farm and harvested on 18 August 2015. The spirit was distilled in 2016 and matured in a combination of American and European oak casks for 3 years, 10 months and 25 days.
It was bottled in July 2020 at 50% ABV, without additions and unchillfiltered. This is one of 9,000 bottles, sold in a 70cl size.
The nose is earthy, with clove, fruit cake, lightly spiced poached pears in red wine, honeycomb ice cream and midsummer hay. The palate brings gentle spice, citrus peel marmalade, porridge and fresh honey. The finish is long, with clove and a warm tingle on the tongue.
