Waterford – Sheestown Edition 1.2 (50%)

Waterford Sheestown Edition 1.2 is an Irish single malt bottled at 50% ABV, matured in American and French oak. It belongs to the distillery's single farm origin range, made with barley from a single farm. Sheestown is a hilly lowland area of limestone and sandstone, with well-drained loam soils. Philip O'Brien has farmed there for half a century, and his daughter Maura works at the distillery. The name comes from the Shees, a family from Kerry who settled in Kilkenny in the 15th century.
