Waterford – Sheestown Edition 1.2 (70cl, 50%)

Waterford Sheestown Edition 1.2 is an Irish single malt from the Farm Origin Series, which looks at the influence of terroir on whisky. It is the second single malt made from barley grown at Sheestown, on Phillip O'Brien's farm. The whisky matured in first-fill American oak, virgin oak, premium French oak and Vin Doux Natural casks. It was bottled in 2020 at 50% ABV in a 70cl bottle, as a limited release of 9,000 bottles. The nose offers honey, barley, fresh pears and apples with light spice. Melon and orange follow on the palate with a touch of crushed cloves, and the finish holds baking spices and butterscotch.
