Waterford Single Farm Origin Ballykilcavan is the first release from Waterford Distillery in this series, in a 70cl bottle. It is made from Taberna barley of the 2015 harvest, grown on David Walsh-Kemis's farm, which is sheltered by forest and has a rich clay loam soil. The crop won him Waterford's Top Barley Grower award.
The nose brings stewed apples, unripe pears and zesty citrus peel, with straw and allspice. The palate is led by orchard fruit and citrus, with buttery biscuits, cinnamon and caraway, and dark oaky spice at the back.
