Waterford Single Farm Origin Bannow Island - Edition 1.1 (70cl)

Waterford Single Farm Origin Bannow Island is the first release in the series, Edition 1.1, in a 70cl bottle. It is made solely from Overture barley harvested in 2015 by Ed Harpur on his farm on Bannow Island in Wexford. The farm's sandy, alluvial soil and seaside position give the barley, and so the whisky, a gently maritime air. Soft, rounded and fruity, it shows peach and nectarine on the nose, with marshmallow, candy floss, sharp apple and a hint of sea breeze. The palate starts soft before power and spice build, with sweet cream, apple sauce and cinnamon heat. Vanilla cream, spiced apples and Garibaldi biscuits close it.
