Waterford – Single Farm Origin Sheestown Edition 1.1

This is an Irish single malt from Waterford Distillery, Edition 1.1 from the Sheestown farm in its Single Farm Origin collection. The collection is built around terroir. Instead of blending barley from many places, each release uses barley grown on one farm, and the distillery keeps farms separate to bring out differences in soil, location and growing conditions. Sheestown Edition 1.1 combines cereal and malt character with fruit, spice and cask-derived complexity. Waterford suggests these releases are of particular interest when tasted alongside other farms or other editions from the same farm.
