Waterford – Single Farm Origin Sheestown Edition 1.2

This is an Irish single malt from Waterford Distillery, part of its Single Farm Origin collection. It is the second Waterford release connected to Sheestown farm. The Single Farm Origin approach keeps barley from each farm separate throughout production, so the grain and its place of origin sit at the centre of the whisky. Edition 1.2 can be set beside Edition 1.1 from the same farm to see how harvest and maturation change the result. It is described as a complex mix of malt, cereal, fruit and spice, with cask sweetness and oak alongside.
