This is a five-year-old blend of Irish grain and malted barley whiskey from West Cork. After triple distillation it is finished in bourbon casks that have been charred twice to level 5. It is bottled at 40% in a 70cl bottle without chill-filtration, and colouring is added.
The heavily charred casks shape a sweet, spicy character built on vanilla, caramelised brown sugar and oak. West Cork Distillers uses a patented technique for the level 5 charring.
The nose is resinous oak, vanilla and wood shavings with ginger, cinnamon and brown sugar. The palate is light and creamy, with malt, vanilla, caramel and chocolate. The finish is medium to long, with soft pepper and a faint touch of smoke.
