A Bottled in Bond rye whiskey from Whiskey Acres Distilling Co., a family farm distillery in DeKalb, Illinois. It is bottled at 50% (100 proof) and won a Double Gold medal at the 2021 San Francisco World Spirits Competition.
The grain is grown, harvested and distilled on the same farm. The mashbill is 75% rye and 25% corn, made entirely from the farm's 2016 rye crop, and the whiskey was aged for at least four years in a bonded warehouse.
The nose is vanilla and butterscotch with a herbal edge. The palate is creamy, with brown sugar, cinnamon, nutmeg, clove and a note of dill. The finish is long, with baking spices and white pepper.
