Whiskey Acres Farm Crafted Rye is a 43.5% rye whiskey made at Whiskey Acres Distilling Co. in DeKalb, Illinois, in a 750ml bottle. The rye and corn are grown on the farm, and the whiskey is mashed, distilled and aged on site. The mashbill is 75% rye and 25% corn. The rye strain was chosen for its soft white pepper character, and the corn adds sweetness and body. It was named 2019 Best Whiskey of the State (Illinois) at the Heartland Spirits Competition. The nose has rye spice, fresh grain and orchard fruit, and the palate is peppery with caramel and baked apple.

Tasting Notes

Nose

Rye spice, freshly harvested grain, a hint of orchard fruit and soft vanilla

Palate

Bold rye pepper balanced by sweet caramel and baked apple, with soft oak, toasted grain, vanilla and butterscotch

Finish

Clean and lingering, with baking cinnamon, soft white pepper and a light honeyed sweetness
