Whitlaw is the name given here to a Highland Park single malt from Orkney, distilled in September 2014 and bottled by Signatory Vintage in September 2024 for its Copper series. It is bottled at 46% in a 70cl bottle, non-chill-filtered and without added colour.
The whisky matured for ten years in rechar butts. Signatory selected the casks individually.
The nose combines blossom honey, caramel and toffee with ripe yellow apples, pears and peaches, and sandalwood, nutmeg and heather add spice. The palate is creamy and slightly oily, with sea salt, dark chocolate, blackcurrants and pepper. The finish is long, slightly dry and woody, with dark chocolate, tobacco and a trace of smoke.
