Angel's Envy – Cellar Collection 01 Oloroso Sherry Cask Finished Kentucky Straight Bourbon (75cl)

This is the first release in Angel's Envy's Cellar Collection, a Kentucky straight bourbon finished in Oloroso sherry casks. The Louisville distillery usually finishes its bourbon in port casks, and this numbered series is where it works with other cask types. It comes in a 750ml bottle. The bourbon completes its full maturation in new charred oak, then spends a shorter second period in the sherry casks. Oloroso is aged oxidatively, so the casks add a dry, nutty, dried-fruit character rather than sweetness. The nose is caramel, dried cherries, raisins and toasted nuts, with vanilla and seasoned oak. The palate is full and layered, with dark dried fruit, brown sugar and toasted pecans, and the finish is long and warming.
