Bomberger's Declaration is a small batch Kentucky straight bourbon, produced at Michter's Distillery in Louisville and bottled at 54% in a 750ml bottle. It is released in annual batches.
It is aged in barrels made from Chinquapin oak, a white oak native to the eastern United States. The staves are air dried and seasoned for about three years before toasting and charring. The mash bill is roughly 79% corn, 11% rye and 10% malted barley.
The nose brings dark fruit, brown sugar, roasted nuts and caramel over toasted oak. The palate moves from toffee to dark chocolate, with berry preserves, vanilla, floral spice and mocha. The finish is long and warming, with drying spice and dark fruit.
