Castle & Key Wheated Bourbon (75cl, 52.9%)

Castle & Key Wheated Bourbon is a cask strength Kentucky bourbon from the distillery in Frankfort, bottled at 52.9% in a 75cl bottle and aged for around four years. It is made from white corn, malted barley and white winter wheat, in a mashbill of 73%, 17% and 10%. The white corn and wheat come from farms in southwestern Kentucky, and fermentation runs for about six days. The nose offers orange zest, peach, oatmeal raisin cookie and vanilla frosting. The palate brings almond pastry, butterscotch, red apple and mango, building to roasted walnut and white sage. The finish is long and warming, with brown sugar, dried cherry, chai spice, leather and walnut.
