Castle & Key Wheated Cask Strength Bourbon is a seven-year-old Kentucky bourbon from the restored Old Taylor Distillery in Frankfort, bottled at 54.1% ABV (108.2 proof) without chill filtration. The mashbill is 73% white corn, 10% white winter wheat and 17% malted barley.
It is made with a low-temperature sweet mash fermentation and a low barrel entry proof, so that grain and yeast character develop over its seven years of maturation.
The nose has oatmeal raisin cookie, vanilla frosting, baked peach and candied pear, with orange peel and cinnamon. The palate is creamy, with almond pastry, butterscotch, macaroon, baking chocolate and clove. The finish is long, with brown sugar, roasted walnut and leather.
