Connemara 12 Year Old (70cl, 40%)

Connemara 12 Year Old is an Irish single malt made from barley malt dried over peat fires, produced at Cooley Distillery in County Louth. It is bottled at 40% in a green 70cl bottle and comes in a tube. It matures almost entirely in former bourbon casks. With the longer maturation the peat smoke recedes a little and leaves more room for the influence of the wood. Colouring is added and it is chill-filtered. The nose brings crème brûlée, singed flowers and strong spices, with a scent of Provençal herb soap. The palate is round and smooth, fairly dry, with pralines, vanilla and exotic pepper. The finish is very long, with honeyed grain and grassy notes.
