Gonzalez Byass Matusalem Vinum Optimum Rare Signatum 30 Year Old Cream Sherry (37.5cl)

Matusalem is a 30-year-old Cream sherry from Gonzalez Byass, in a 37.5cl bottle. It is a blend of 75% Palomino and 25% Pedro Ximenez, aged for 30 years in cask until it reaches an intense mahogany colour. The nose is deep with dried fruits, raisins, spices and mature oak. On the palate it is smooth, sweet, long and velvety. The finish is bittersweet, from the sweet Pedro Ximenez meeting the bitter oak tannins. It suits blue cheeses such as Stilton, or fruit pudding and apple pie.
