Gonzalez Byass Nectar Pedro Ximénez (37.5cl, 15%)

Gonzalez Byass Nectar is a sweet Pedro Ximénez sherry from Jerez, Spain, bottled at 15% in a 37.5cl half-bottle. The grapes are laid on esparto grass mats in the sun to concentrate their sugars before pressing. The wine is aged for a minimum of eight years through the solera system in seasoned American oak casks. González Byass was founded in 1835 and is the only winery in Jerez that grows its own Pedro Ximénez. The nose is raisin, fig and dark honey with chocolate and toasted sesame. The palate is thick and velvety, with prune, mocha, molasses, candied peel and date, kept in balance by acidity. The finish is long, with Christmas pudding and dark chocolate.
