High West – Cask Collection Sauvignon Blanc Finish Bourbon (50%)

This is a bourbon from the High West Cask Collection, made from a blend of straight bourbon and straight rye whiskeys aged between 6 and 10 years. It is bottled at 100 proof. The blend was finished for 10 months in barrels that had previously held Sauvignon Blanc white wine. The finish brightens the whiskey and lifts the heavy caramel notes with orchard fruit and a light floral character. The nose brings underripe peach, banana cream pie, vanilla and spring flowers. On the palate come green apple, grapefruit zest, cinnamon poached pears and toasted oak, followed by a warm, sweet finish of honeyed gingerbread and wet slate.
