Sky of Orkney is an 18 year old Highland Park single malt, bottled at 46% in a 70cl bottle. It was matured in first-fill casks of sherry-seasoned European and American oak, combined with refill casks. The colour is natural, a deep amber.
The nose has light heather smoke and cherries, with yellow plums and dried fruit, plus creamy caramel and a little oak. On the palate it is creamy, with sweet fruit, nutty sherry notes, caramelised malt, ripe orange, raisins and restrained oak. The finish shows gentle European oak, with heather smoke returning behind it.
