This is an Orkney single malt from Highland Park, bottled at natural cask strength. It is non-chill-filtered and has no added colour.
Master Whisky Maker Gordon Motion put Release No. 5 together with a high proportion of European oak sherry-seasoned casks. American oak sherry-seasoned casks, a small amount of ex-bourbon wood and first-fill stalk oak casks complete the mix. It is in a 750ml bottle.
The nose brings aromatic peat smoke, clove, dried fruit and dark chocolate, with toasted oak and heather honey. On the palate come sun-dried raisins, cinnamon and dark cocoa, and the finish is long and warm with sweet spices and gentle peat smoke.
