Highland Park Ice Edition is a 17-year-old single malt from Orkney, bottled at 53.9% in a 70cl bottle. It follows on from the earlier Valhalla Collection and takes its name from Niflheim, the dark, icy world of Norse mythology.
Highland Park matures most of its malts in sherry casks, but this one was matured in first-fill bourbon casks.
The nose combines cool fresh pineapple and ripe mango with aromatic smoke and sweet ginger root. On the palate, soft peat smoke, vanilla pod and sweet floral notes lead. The finish is creamy, oily and dry, with lingering wood and spice.
