Highland Park – Sea of Orkney 16 Year Old (44.5%)

This is a 16 year old single malt from Highland Park, the Orkney distillery founded in 1798. The Sea of Orkney edition is a nod to the Atlantic that surrounds the islands and the maritime influence on the whisky. It was matured in a combination of refill and first fill sherry-seasoned American oak casks. The first fill casks add spice and fruit, while the refill casks contribute a softer maturity. The distillery uses lightly peated malt, giving a gentle smoke alongside the fruit and a salty, maritime note. Bottled at 44.5% ABV.
