Highland Park – Sky of Orkney 18 Year Old (46%)

Sky of Orkney is an 18-year-old island single malt Scotch from Highland Park, part of an Orkney trilogy inspired by the skies above the islands, from Atlantic storm clouds to the northern lights. It matured in refill and first fill sherry-seasoned European and American oak casks. The European oak is described as adding spice and dark fruit, the American oak vanilla sweetness. The distillery uses lightly peated malt and Orcadian heather peat, giving a mild smoke alongside fruit, spice and a maritime saltiness. Bottled at 46%.
