Highland Park Spirit of the Bear is a single malt from Kirkwall on Orkney, in a 1 litre bottle at 40% ABV. The edition draws on the Viking tradition of the Orkney Islands, and a bear, a symbol of strength, endurance and protection, features in its design.
The whisky is matured mainly in American and European oak casks previously seasoned with sherry. The barley is partly dried over local Orkney peat, and the distillery uses spring water from the island.
The nose is heather honey, vanilla and ripe fruit, with apple, pear and citrus. The palate is soft and creamy, with honey, caramel and orchard fruit, then raisins, orange and chocolate alongside gentle, slightly salty peat smoke. The finish is medium to long and slightly dry.
