San Emilio is a sweet Pedro Ximénez sherry from Lustau. After picking, the grapes are dried in the sun, which concentrates their sugars and aromas.
Fermentation starts slowly and is stopped so that the natural sugars remain in the wine. It is then aged for 12 years in contact with the air in Jerez de la Frontera, developing rich, complex aromas.
