The Balvenie – DoubleWood 12 Year Old (70cl, 40%)

The Balvenie DoubleWood 12 Year Old is a Speyside single malt matured in two types of wood. It first spends at least 12 years in traditional casks, American oak ex-bourbon barrels and ex-sherry hogsheads, then moves for a further nine months into Spanish oak casks that held Oloroso sherry. After that the whisky rests for three to four months in large oak tuns, so the whiskies from the individual casks can marry. The process was devised by Malt Master David Stewart in 1982, and DoubleWood 12 was launched in 1993. The traditional casks soften the spirit and add delicacy, while the sherry wood brings depth and fullness of flavour.
