The Sexton Single Malt Irish Whiskey (70cl, 40%)

The Sexton is an Irish single malt in a 70cl bottle, bottled at 40% ABV. It is made only from malted Irish barley, distilled three times in copper pot stills at Old Bushmills Distillery in County Antrim, and matured for at least four years. Maturation takes place in European oak Oloroso sherry butts, using first, second and third fill casks. Master blender Alex Thomas chose the wood, the toast level and the sherry seasoning. The French oak is air-dried in Jerez, then the casks hold Oloroso for two years before they travel to Ireland. The nose offers honeyed malt, nuts and dark chocolate, with marzipan, allspice and fruit. The palate is mild and honeyed at first, then turns to dried spices and oily sweetness. The finish is soft wood and honey.
